Fingerling potatoes and lentils are two of the surprises people will find in this week’s “Farmer’s Choice” CSA box from Market Day Foods here in Bozeman. Don’t think that these hardy foods need to slow you down at dinner time; both can become your convenience foods if you parboil them and have them ready to go in your refrigerator. This way, Crispy-Roasted Smashed Potatoes or even Breakfast Potatoes can be on your plate in less than 30 minutes. As for the lentils, dress them with a vinaigrette (great with something a little fatty like duck), or turn them into an earthy-rich purée to go with a piece of salmon. Enjoy!
Ingredients
- fingerling potatoes (or other small new potatoes)
- water
- salt
Instructions
- Scrub any dirt from the potatoes under running water using a vegetable brush or clean cloth.
- In a saucepan, combine the potatoes with cold water to cover by an inch or two, and a large pinch of salt. Bring to boil, then lower heat to a gentle simmer and cook until barely fork tender, about 20 - 30 minutes.
- Drain, cool, and store in the refrigerator for a few days, until you're ready to turn them into something delicious!
