A pineapple version of mango salsa.
This is a no-recipe recipe: ½ pineapple (knife peeled and cored) + 1 lime, juiced + cilantro + red onion + jalapeño or serrano chile + pinch salt.
Serve with grilled salmon or other fish, tacos (green chile chicken, Mexican chicken, both slow cooker weeknight faves) is one of our favorites, made in a slow cooker for a super easy dinner), chicken chili, chicken chili soup, or liven up rice and beans.
