Sweet Chia & Celery Seed Dressing

This sweet dressing is great on arugula with rotisserie chicken. Another fun way to use it is to drizzle over fish tacos with blood orange salsa. If you’re wondering what kind of oil to use in your kitchen, for cooking and for dressings like this, I recommend olive oil and other oils high in monounsaturated fats, like the high-oleic safflower oil from The Oil Barn in Big Sandy, Montana (find it at Daniel’s Meats, Town & Country, and Joe’s Parkway in Bozeman).

Sweet Chia & Celery Seed Dressing

Servings 4 people

Ingredients

  • 2 tbsp olive oil or high-oleic safflower oil (The Oil Barn)
  • 1 tbsp white wine vinegar
  • 1 tbsp honey
  • 1/4 tsp chia seeds
  • 1/4 tsp celery seeds
  • 1/4 tsp salt
  • several grinds of fresh black pepper

Instructions

  1. Whisk all ingredients together and serve with arugula and orange, grapefruit, or blood orange segments for a great accompaniment to grilled fish or fish tacos.
