“This Mediterranean-inspired tart uses an easy to make Italian egg pastry that ends up being more like a thin cracker crust, rather than “pastry”—just enough to hold the filling together into nice, neat slices. I used some buckwheat flour with whole wheat which is what makes the beautiful, slightly purple color.”
