After enjoying a watermelon feta salad at a party a couple weeks back, I’ve been on the lookout for a yellow watermelon of my very own; I finally found one at the Co-Op and we’ve been enjoying it all week. Today was its last hurrah, so I puréed the leftovers and made a granita with it. Given its distinctly sweet and floral flavor, I thought that St. Germain elderflower liquor would make an ideal partner.
Like all granitas, freeze in a shallow dish and scrape with a fork on the hour. This combination of ingredients took 4 hours to get to the shave-ice texture, one hour longer than my Margarita Granita. Serve in bowls or as a slushy cocktail in a glass.
In advance: make a batch of double simple syrup and get it chilled. Double simple is a 2:1 ratio versus simple syrup’s 1:1. See Edible Bozeman’s Spring 2026 recipe for a good syrup overview, or my recipe on RIPE (rose geranium or any other flavor).
Yellow Watermelon St. Germain Granita
Ingredients
- 2 cups yellow watermelon juice, see instructions from about 4 cups cubed yellow watermelon
- 6 tablespoons St. Germain elderflower liquor 3 ounces
- 4 tablespoons freshly squeezed lime juice about 2 limes
- 4 tablespoons double simple syrup, chilled
- additional water to bring liquid total to 3 cups

Make the yellow watermelon juice in a Vitamix blender: add about 4 cups cubed watermelon and process on variable speed, slowly increasing from lowest setting to 4 and blending for less than a minute so that flesh is puréed and seeds remain whole. Strain juice into a glass measuring cup and reserve 2 cups for recipe; use the remaining for another purpose.
1½ cups yellow watermelon juice is the minimum for this recipe.

Combine yellow watermelon juice, St. Germain liquor, lime juice, double simple syrup, and enough water to bring total liquid to 3 cups. Pour into an 8-by-8-inch glass dish and freeze. Scrape the granita with a fork every hour until slightly slushy and completely flaked, about 4 hours for this blend. Enjoy!
Granita keeps surprisingly well in the freezer—for days and days, making it an ideal make in advance refresher.
