My favorite mangos are the small ones that look like puffed commas and fit nicely in the palm of your hand, known as Manila mangos, golden mangos, and Ataulfo mangos.
This is a no-recipe recipe: 2 or 3 mangos (peeled and diced) + 1 lime, juiced + cilantro + red onion + jalapeƱo or serrano chile + pinch salt. Pineapple makes a great salsa too, just swap for the mango.
Serve with grilled salmon or other fish, tacos (green chile chicken is one of our favorites, made in a slow cooker for a super easy dinner), or enjoy on its own as kind of a fruit salad. It keeps for a couple days, refrigerated.
