Get yourself a 3 pound chuck roast and get ready for a great dinner. Sprinkle with paprika, salt and pepper, and whatever else you like. I had a coffee rub from Olivelle and added a little of that too. Brown all sides then set to cook, either 6 hours on high in a slow cooker or 3–4 hours in an enameled cast iron pot (“dutch oven”) in the oven. Either way you will have a tender hunk of roast beef to do with what you want at dinner time: serve with potatoes (mashed or roasted), or a really great loaf of crusty bread and something green, broccoli or braising greens are in my fridge.
Start it to cook in the morning and return home to the aromas of a great dinner!
