Co-Co Truffles

Que Se Raw Se Raw, a local raw food takeout place, is on vacation through the end of this month. I was having trouble living without their coconut “truffles”, so I started experimenting with my food processor and after a few iterations, I arrived at this version. These candies have a mellow sweetness from agave nectar, that won’t spike your blood sugar, combined with a satisfying nutty, coconut flavor. Give them a try and let me know how you like them!

Co-Co Truffles
makes 30-36 1-inch balls

1 1/2 cups organic almonds, raw or roasted with skins on
1 cup unsweetened, organic shredded coconut
1/4 cup unsweetened cocoa powder
3 tablespoons agave nectar
3 tablespoons organic coconut oil
1/4 teaspoon fine grained sea salt

1. Place almonds, coconut and cocoa powder in food processor and process until you have a fine meal.

2. Add agave nectar, coconut oil and salt and process into a uniform paste. It should clump together and just form a ball inside the work bowl.
3. Scoop 1 inch portions, roll into balls and place on a sheet pan. Refrigerate until firm then place in air tight container and store in the fridge. Enjoy cold, or bring to room temperature.
Variation:
1 cup organic, raw almonds soaked in water overnight then drained and rinsed with fresh water
½ cup coconut butter
6 very soft medjool dates, pitted
2 heaping Tbsp. cocoa powder (unsweetened)
¼ tsp. sea salt or mineral salt
